Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 3 tablespoons blackening seasoning
  • 3 tablespoons vegetable oil
  • 3 cups cold cooked jasmine rice
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 large (diced) red bell pepper
  • 3 stalks (sliced) green onions (scallions)
  • 3 minced garlic cloves
  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon dark sesame oil
  • 2 large eggs
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 4 pieces lime wedges (for serving)

Directions

Step 1

Place the boneless chicken breasts on a cutting board and pat them dry with paper towels. Generously coat both sides of the chicken breasts with the blackening seasoning.

Step 2

In a large skillet, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering. Add the chicken breasts to the skillet and cook for 5-6 minutes on each side, or until the chicken is blackened on the outside and fully cooked through (internal temperature of 165°F). Remove the chicken from the skillet, cover with foil to keep warm, and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and diced red bell pepper. Sauté for 2 minutes, until fragrant and slightly softened.

Step 4

Crack the eggs into the skillet and scramble them into the garlic and peppers. Cook until the eggs are just set, about 1-2 minutes.

Step 5

Add the cold cooked jasmine rice to the skillet, breaking up any clumps of rice with a wooden spoon or spatula. Stir the rice into the egg mixture until evenly combined.

Step 6

Add the pineapple chunks, sliced green onions, soy sauce, and sesame oil to the skillet. Toss everything together and cook for 3-4 minutes until the rice is heated through and lightly golden in spots. Season with salt and black pepper to taste.

Step 7

Slice the blackened chicken into thin strips.

Step 8

To serve, divide the fried rice evenly among four plates or bowls. Top each portion with slices of blackened chicken and garnish with additional green onions if desired. Serve with lime wedges on the side for a fresh, zesty finish.
