Ingredients

  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 300 grams ground beef (preferably 80% lean)
  • 200 grams ground pork
  • 1 cup whole milk
  • 1 cup dry white wine
  • 2 tablespoons tomato paste
  • 2 cups beef stock
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 pinch freshly grated nutmeg
  • 0 Parmesan cheese (optional, for serving)

Directions

Step 1

Heat the olive oil and butter over medium heat in a large heavy-bottomed pot or Dutch oven.

Step 2

Add the chopped onion, carrot, and celery, and sauté for about 5-7 minutes until softened but not browned.

Step 3

Increase the heat to medium-high and add the ground beef and pork. Cook, stirring frequently, until the meat is browned, about 10 minutes.

Step 4

Lower the heat to medium and pour in the milk. Simmer gently while stirring occasionally until the milk has evaporated completely, about 10-15 minutes.

Add a pinch of freshly grated nutmeg and stir to combine.

Pour in the white wine and cook until it has mostly evaporated, approximately 10 minutes.
