  • 1 cup, loosely packed fresh mint leaves
  • 1 medium-sized, finely chopped red chilli
  • 2 tablespoons honey
  • 2 tablespoons white wine vinegar
  • 2 tablespoons water
  • 1 tablespoon, freshly squeezed lemon juice

Directions

Step 1

Preheat the oven to 400°F (200°C).

Trim any excess fat from the rack of lamb and pat it dry with paper towels.

Step 3

In a small bowl, mix olive oil, minced garlic, chopped rosemary, salt, and black pepper to form a paste.

Rub the garlic and rosemary mixture evenly over both racks of lamb, ensuring the seasoning is well-distributed.
