Ingredients

  • 1 piece Ham bone
  • 3 medium Carrots
  • 3 medium Celery stalks
  • 1 large Onion
  • 3 pieces Garlic cloves
  • 2 medium Russet potatoes
  • 15 oz Canned white beans (like cannellini or great northern beans)
  • 6 cups Low-sodium chicken or vegetable stock
  • 2 cups Water
  • 1 tsp Thyme (dried)
  • 1 piece Bay leaf
  • 2 tsp Parsley (chopped, optional for garnish)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 1 tbsp Olive oil

Directions

Step 1

Heat the olive oil in a large stock pot over medium heat.

Step 2

Dice the carrots, celery, and onion, and mince the garlic cloves.

Step 3

Add the diced onion, celery, and carrots to the pot and sauté for 5-7 minutes, or until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 4

Add the ham bone to the pot and pour in the chicken or vegetable stock along with the water. Bring the mixture to a boil.

Step 5

While waiting for the pot to boil, peel and dice the potatoes.

Step 6

Once the pot reaches a boil, reduce the heat to a simmer. Add the diced potatoes, thyme, bay leaf, salt, and pepper. Cover the pot partially with a lid and let simmer for 90 minutes, stirring occasionally.

Drain and rinse the canned white beans, then add them to the pot during the last 30 minutes of cooking.
