Ingredients

  • 1 lb Ground beef
  • 2 tbsp Olive oil
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 1 large Bell pepper, diced (any color)
  • 15 oz Canned black beans, drained and rinsed
  • 10 oz Canned diced tomatoes with green chilies
  • 1 packet Taco seasoning
  • 1 cup Corn kernels (fresh, frozen, or canned)
  • 4 small Flour tortillas (cut into strips)
  • 2 cups Shredded Mexican cheese blend
  • 2 tbsp Chopped fresh cilantro (optional, for garnish)
  • 0.5 cup Sour cream (optional, for serving)

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil.

Step 2

Once the oil is hot, add the diced onion and sauté for 3-4 minutes until softened.

Step 3

Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 4

Add the ground beef to the skillet and cook until browned and no longer pink, breaking it apart with a wooden spoon as it cooks. Drain any excess grease, if necessary.

Step 5

Stir in the taco seasoning, diced bell pepper, and canned diced tomatoes with green chilies. Cook for 2-3 minutes to combine the flavors.

Step 6

Add the drained black beans and corn kernels, stirring until evenly mixed. Allow the mixture to simmer for 5 minutes.

Step 7

Preheat the oven to 375°F (190°C).

Step 8

Grease a 9x13-inch baking dish. Layer the bottom with half of the tortilla strips.

Step 9

Spoon half of the beef and vegetable mixture over the tortilla strips. Top with 1 cup of shredded Mexican cheese.

Step 10

Repeat the layers with the remaining tortilla strips, beef and vegetable mixture, and 1 cup of cheese.

Step 11

Cover the baking dish with aluminum foil. Bake in the preheated oven for 15 minutes.

Step 12

Carefully remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

Step 13

Remove the dish from the oven and let it rest for 5 minutes before serving.

Step 14

Garnish with chopped cilantro and serve with a dollop of sour cream, if desired.
