  • 3 cloves garlic cloves, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 1 14-ounce can diced tomatoes, canned
  • 2 medium potatoes, peeled and cubed
  • 1 teaspoon fresh thyme, chopped
  • 1 leaf bay leaf
  • 1 cup alphabet pasta
  • 2 tablespoons parsley, chopped (optional for garnish)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

Step 2

Season the beef stew meat with 1 teaspoon of salt and 0.5 teaspoon of black pepper. Add the beef to the pot and sear until browned on all sides, about 5-7 minutes. Remove the beef and set aside.

In the same pot, add the diced yellow onion, sliced carrots, and chopped celery. Cook for 5 minutes, stirring occasionally, until the vegetables soften slightly.
