Ingredients

  • 300 grams Quorn mince
  • 1 tablespoon Olive oil
  • 1 medium Onion, finely chopped
  • 2 medium Carrot, diced
  • 1 Celery stalk, diced
  • 2 Garlic cloves, minced
  • 2 tablespoons Tomato puree
  • 400 ml Vegetable stock
  • 1 tablespoon Worcestershire sauce (vegetarian)
  • 100 grams Frozen peas
  • 800 grams Potatoes, peeled and chopped
  • 50 grams Butter
  • 100 ml Milk
  • 100 grams Cheddar cheese, grated
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper

Directions

Step 1

Preheat your oven to 200°C (180°C fan) or 400°F.

Step 2

In a large frying pan, heat the olive oil over medium heat. Add the chopped onion, carrot, and celery, and sauté for 5-7 minutes until softened.

Step 3

Stir in the minced garlic and cook for another minute until fragrant.

Step 4

Add the Quorn mince to the pan and stir well. Cook for 2-3 minutes.

Step 5

Mix in the tomato puree, Worcestershire sauce, and vegetable stock. Bring to a simmer and cook for 10 minutes, allowing the mixture to thicken slightly.

Add the frozen peas to the mixture and cook for an additional 2 minutes. Season with salt and pepper to taste.

Meanwhile, boil the chopped potatoes in a large pot of salted water for 15 minutes or until tender. Drain thoroughly.

Mash the potatoes with butter and milk until smooth and creamy. Stir in half the grated cheese, and season with a pinch of salt and pepper.

Spoon the Quorn mixture into a baking dish, spreading it evenly. Top with the mashed potatoes, spreading it out with a spatula or fork to cover the filling.

Sprinkle the remaining grated cheese over the top of the mashed potatoes.

Bake in the preheated oven for 20 minutes, or until the top is golden and bubbling.
