Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup dried cherries
  • 0.25 cup fresh parsley
  • 0.25 cup fresh mint
  • 2 stalks green onions
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup almonds (slivered or sliced)

Directions

Step 1

Rinse the quinoa under cold running water using a fine-mesh sieve to remove any bitterness.

Step 2

In a medium saucepan, combine the quinoa and water. Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 15 minutes or until all the water is absorbed. Remove from heat and let it sit, covered, for 5 minutes. Fluff the quinoa with a fork.

Step 3

While the quinoa is cooking, chop the parsley and mint finely, and thinly slice the green onions.

Step 4

In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper to make the dressing.

Step 5

In a large mixing bowl, combine the cooked quinoa, dried cherries, chopped parsley, chopped mint, green onions, and almonds.

Step 6

Drizzle the dressing over the quinoa mixture and toss gently to combine, ensuring everything is evenly coated.

Step 7

Taste and adjust seasoning with additional salt or pepper if needed.

Step 8

Serve immediately at room temperature or refrigerate for up to 2 days and serve chilled.
