  • 1 cup Black beans, rinsed and drained
  • 1 cup Corn kernels, fresh or frozen
  • 2 tablespoons Lime juice
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 8 pieces Small tortillas (corn or flour)
  • 1 large Avocado, sliced
  • 1 cup Cherry tomatoes, halved
  • 0.25 cup Fresh cilantro, chopped
  • 1 to taste Hot sauce (optional)

Directions

Step 1

Rinse the quinoa under cold water using a fine mesh sieve to remove any bitterness.

Step 2

In a medium saucepan, combine the quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until the quinoa is cooked and the water is absorbed. Fluff with a fork and set aside.
