Ingredients

  • 1 lb Chicken tenders
  • 1 cup Quinoa
  • 0.5 cup All-purpose flour
  • 2 Eggs
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0 Olive oil spray
  • 0 Cooking spray or parchment paper

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly spray it with cooking spray to prevent sticking.

Step 2

Rinse the quinoa under cold water using a fine-mesh sieve and drain well. Spread the quinoa onto a dry skillet and toast over medium heat for 5-7 minutes, stirring frequently, until it turns golden and becomes fragrant. Pour the toasted quinoa into a shallow dish to cool.

Step 3

Place the all-purpose flour in another shallow dish. In a separate shallow dish, whisk the eggs together until well-beaten. Add garlic powder, paprika, salt, and black pepper to the flour and mix to combine.

Step 4

Working with one chicken tender at a time, dredge it in the seasoned flour, ensuring it’s fully coated. Then dip it in the beaten eggs, allowing any excess egg to drip off. Finally, press the chicken tender into the toasted quinoa, coating it evenly on all sides. Repeat with the remaining chicken tenders.

Step 5

Arrange the quinoa-crusted chicken tenders on the prepared baking sheet, making sure they are in a single layer and not touching.

Step 6

Lightly spray the chicken tenders with olive oil spray to help them crisp up in the oven.

Step 7

Bake in the preheated oven for 20-25 minutes, flipping the chicken tenders halfway through, until they are golden brown and cooked through. The internal temperature should reach 165°F (74°C).

Step 8

Remove from the oven and let rest for 5 minutes before serving. Enjoy your quinoa-crusted chicken fingers warm with your favorite dipping sauce!
