  • 1 medium Zucchini, diced
  • 2 large Tomatoes, diced
  • 2 cups Baby spinach
  • 6 cups Vegetable stock
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 leaf Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Lemon juice

Directions

Step 1

Rinse the quinoa and barley under cold running water and set them aside to drain.

Step 2

In a large pot, heat the olive oil over medium heat.

Add the diced onion, carrots, and celery, and cook for 5 minutes, stirring occasionally, until the vegetables begin to soften.
