Ingredients

  • 240 ml Whole milk
  • 85 g Unsalted butter
  • 50 g Granulated sugar
  • 7 g Active dry yeast
  • 60 ml Warm water (38–43°C)
  • 480 g All-purpose flour
  • 5 g Salt
  • 1 large Egg
  • 30 g Melted butter (for brushing)

Directions

Step 1

In a small saucepan, heat the milk over medium heat until it begins to steam (do not boil). Remove from heat and stir in the butter and sugar until melted and fully combined. Let the mixture cool to lukewarm (about 38–43°C).

Step 2

In a small bowl, dissolve the active dry yeast in warm water. Let it sit for 5–10 minutes until the mixture becomes foamy.

Step 3

In a large mixing bowl or the bowl of a stand mixer, combine the lukewarm milk mixture with the yeast mixture. Add the egg and whisk to combine.

Step 4

Gradually add the flour and salt, mixing until a shaggy dough forms. If using a stand mixer, switch to the dough hook and knead on medium speed for 6–8 minutes, or knead by hand on a floured surface until the dough is smooth and elastic.

Step 5

Transfer the dough to a lightly greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1 hour, or until it has doubled in size.

Step 6

Punch the dough down and divide it into 12 equal portions. Shape each portion into a smooth ball and place them on a greased or parchment-lined baking sheet, spaced slightly apart.
