  • 4 pieces Chicken breasts (boneless, skinless)
  • 1 can (10 oz) Canned diced tomatoes with green chilies
  • 2 tablespoons Taco seasoning
  • 1 cup Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh cilantro (optional, for garnish)
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Season the chicken breasts on both sides with salt, black pepper, and 1 tablespoon of taco seasoning.

Step 3

In a large oven-safe skillet, heat the olive oil over medium heat. Sear the chicken breasts for 2-3 minutes on each side until lightly browned. Remove the skillet from heat.
