Ingredients

  • 2 tablespoons olive oil
  • 1 medium, finely diced yellow onion
  • 3 minced garlic cloves
  • 5 cups vegetable broth
  • 2 15-ounce cans, drained and rinsed canned white beans
  • 5 cups, roughly chopped fresh spinach
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 0.5 teaspoons (or to taste) salt
  • 0.25 teaspoons (or to taste) black pepper
  • 1 tablespoon lemon juice
  • 0.25 cup, grated (optional, for serving) parmesan cheese
  • 0 for serving crusty bread

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion to the pot and sauté for 4-5 minutes until softened.

Step 3

Add the minced garlic and sauté for another 1-2 minutes until fragrant.

Step 4

Pour the vegetable broth into the pot and bring it to a gentle boil.

Step 5

Stir in the white beans, dried thyme, and dried oregano. Simmer for 10 minutes.

Step 6

Use a ladle to remove about 2 cups of the soup (including both liquid and beans) and blend it in a blender or with an immersion blender until smooth. Return the blended mixture back to the pot to thicken the soup.

Step 8

Season the soup with salt, black pepper, and lemon juice. Taste and adjust the seasoning as needed.

Step 10

Serve hot with slices of crusty bread on the side.
