Ingredients

  • 2 whole avocado
  • 400 grams canned black beans
  • 200 grams cherry tomatoes

  • 100 grams spinach leaves
  • 2 tablespoons olive oil
  • 1 whole lime
  • 1 teaspoon cumin powder
  • 0.5 teaspoons smoked paprika
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh cilantro

Directions

Step 1

Rinse and drain the canned black beans thoroughly. Set aside.

Step 2

Dice the avocado into bite-sized chunks and halve the cherry tomatoes. Finely chop the red onion and cilantro.

Step 3

In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Add the chopped red onion to the skillet and sauté for 1-2 minutes until slightly softened.
