  • 0.5 teaspoon paprika
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 0.5 cup sour cream (for serving)
  • 0.5 cup salsa (for serving)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 2

Add the diced bell peppers, red onion, zucchini, and corn to the skillet. Cook for 4-5 minutes, stirring occasionally, until the vegetables are tender but still slightly crisp.

Step 3

Season the vegetables with salt, black pepper, cumin, and paprika. Stir to combine and cook for an additional 1-2 minutes. Remove the skillet from heat and set the vegetables aside.

Place one tortilla on a clean plate or flat surface. Sprinkle 2-3 tablespoons of shredded cheese over half of the tortilla. Remove the quesadillas from the skillet and let them cool for 1-2 minutes. Cut each quesadilla into wedges.
