Ingredients

  • 4 pieces Turkey or chicken cutlets
  • 0.5 cups All-purpose flour
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 clove Garlic clove (minced)
  • 0.5 cups Dry white wine or chicken stock
  • 2 tablespoons Lemon juice (freshly squeezed)
  • 1 tablespoon Capers (optional)
  • 2 tablespoons Fresh parsley (chopped)
  • 4 slices Lemon slices (for garnish)

Directions

Step 1

Place the turkey or chicken cutlets between two sheets of plastic wrap or parchment paper and gently pound them with a meat mallet or rolling pin until they are about 1/4 inch thick.

Step 2

In a shallow dish, combine the flour, salt, and pepper. Dredge each cutlet in the flour mixture, shaking off excess flour.

Step 3

Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once hot, add the cutlets in a single layer and cook for 2-3 minutes per side, or until golden brown and cooked through. Do this in batches if necessary. Remove the cutlets from the skillet and set aside.
