Ingredients

  • 12 oz pappardelle pasta
  • 5 oz canned tuna in olive oil
  • 10 oz canned baby clams
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 0.5 tsp red pepper flakes
  • 2 tbsp fresh parsley, chopped
  • 1 lemon, zested and juiced
  • 0.25 cup dry white wine
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil, and cook the pappardelle pasta according to the package instructions until al dente. Reserve 1 cup of the pasta cooking water before draining the pasta.

Step 2

While the pasta cooks, heat 3 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Add the minced garlic and red pepper flakes to the skillet. Sauté for 1-2 minutes, or until the garlic becomes fragrant but not browned.

Pour in the dry white wine and allow it to simmer for 2-3 minutes to reduce slightly.

Step 5

Add the canned baby clams (including their juices) and canned tuna (drained) to the skillet. Stir gently to combine and heat through, about 2-3 minutes.

Stir in the lemon zest, lemon juice, and chopped parsley. Season with salt and black pepper to taste.

Add the cooked pappardelle pasta to the skillet and toss gently to coat in the sauce. If the mixture feels too dry, add some of the reserved pasta cooking water, a few tablespoons at a time, until the desired consistency is reached.
