Ingredients

  • 1 pound Ground beef
  • 2 tablespoons Taco seasoning
  • 0.25 cup Water
  • 1 cup Salsa
  • 1 can Black beans
  • 1.5 cups Shredded Mexican blend cheese
  • 1 box Jiffy cornbread mix
  • 1 large Egg
  • 0.33 cup Milk
  • 0 Optional toppings: sour cream, diced tomatoes, cilantro, jalapeños

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.

Step 2

In a large skillet over medium heat, cook the ground beef until browned, breaking it up into crumbles. Drain any excess fat.

Step 3

Stir in the taco seasoning and 1/4 cup of water. Cook for another 2 minutes until the beef is coated with the seasoning.

Step 4

Remove the skillet from heat and mix in the salsa and drained black beans. Stir until evenly combined.

Step 5

Spread the beef mixture evenly into the prepared baking dish. Sprinkle 1 cup of shredded cheese over the beef layer.

Step 6

In a medium mixing bowl, prepare the cornbread mix according to the package instructions by combining the cornbread mix, egg, and milk. Stir until just combined.

Step 7

Pour the cornbread batter evenly over the beef and cheese layer and smooth it out with a spatula.

Step 8

Sprinkle the remaining 1/2 cup of shredded cheese over the top of the cornbread layer for extra cheesiness.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the cornbread topping is golden brown and fully cooked. A toothpick inserted into the cornbread should come out clean.

Step 10

Remove from the oven and let the casserole rest for 5 minutes. Serve warm with your favorite toppings like sour cream, diced tomatoes, cilantro, or jalapeños.
