Ingredients

  • 120 grams All-purpose flour
  • 120 grams Sourdough starter discard
  • 180 milliliters Milk
  • 1 large Egg
  • 30 grams Unsalted butter, melted
  • 15 grams Sugar
  • 8 grams Baking powder
  • 1 gram Baking soda
  • 1 gram Salt
  • 5 milliliters Vanilla extract
  • 15 milliliters Butter or oil for greasing

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt.

Step 2

In a separate bowl, combine the sourdough starter discard, milk, egg, melted butter, and vanilla extract. Whisk until smooth.

Step 3

Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Avoid overmixing; a few lumps are okay.

Step 4

Heat a non-stick skillet or griddle over medium heat. Lightly grease it with butter or oil.

Step 5

Scoop 1/4 cup (60 ml) of the pancake batter onto the heated skillet for each pancake.

Step 6

Cook for 2-3 minutes, or until bubbles form on the surface and the edges look set. Flip the pancake and cook for another 1-2 minutes until golden brown.

Step 7

Repeat with the remaining batter, greasing the skillet as needed.

Step 8

Serve warm with your favorite toppings, such as maple syrup, butter, fresh fruit, or yogurt.
