Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef or lamb
  • 2 cups frozen mixed vegetables (peas, carrots, and corn)
  • 1 tablespoon tomato paste
  • 1 cup beef or chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 4 cups instant mashed potatoes
  • 2 tablespoons butter
  • 0.5 cup milk
  • 1 cup shredded cheddar cheese

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute.

Step 3

Add the ground beef or lamb to the skillet and cook until browned, breaking it up with a wooden spoon as it cooks. Drain any excess fat, if necessary.

Step 4

Stir in the frozen mixed vegetables, tomato paste, beef or chicken broth, Worcestershire sauce, salt, and black pepper. Let the mixture simmer for 5-7 minutes, stirring occasionally, until slightly thickened.

Step 5

Prepare the instant mashed potatoes according to the package instructions, using the butter and milk for added creaminess. Set aside.

Step 6

Transfer the meat and vegetable mixture to a 9x9-inch baking dish, spreading it out evenly. Top with the mashed potatoes, spreading them carefully to cover the filling.

Step 7

Sprinkle the shredded cheddar cheese evenly over the mashed potato layer.

Step 8

Place the baking dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbling.

Step 9

Remove from the oven and let the shepherd's pie rest for 5 minutes before serving. Enjoy!
