Ingredients

  • 4 sausage links (mild or spicy)
  • 1 lb baby potatoes, halved
  • 2 bell peppers (red, yellow, or green), sliced
  • 1 zucchini, sliced into half-moons
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup grated Parmesan cheese (optional)
  • 2 tbsp fresh parsley, chopped (optional for garnish)

Directions

Step 1

Preheat a large skillet or frying pan over medium heat.

Step 2

Add 1 tablespoon of olive oil to the pan and cook the sausage links for about 8-10 minutes, turning frequently, until browned and cooked through. Remove the sausages from the pan and set aside.

Step 3

In the same pan, add the remaining 1 tablespoon of olive oil. Add the halved baby potatoes, cut side down, and cook for 5-6 minutes or until they begin to brown.

Step 4

Add the sliced bell peppers, zucchini, and minced garlic to the pan. Stir well to combine with the potatoes. Cook for 7-8 minutes, stirring occasionally, until the vegetables are tender-crisp.

Step 5

Slice the cooked sausage into bite-sized pieces and return them to the pan. Sprinkle with Italian seasoning, salt, and black pepper, then stir everything together.

Step 6

Cook for an additional 3-4 minutes to allow the flavors to meld and the sausage to reheat.

Step 7

Optional: Sprinkle grated Parmesan cheese over the top and garnish with fresh parsley before serving.

Step 8

Serve hot and enjoy your Quick Sausage Dinner!
