  • 0.5 cup chicken broth
  • 1 tbsp balsamic vinegar
  • 1 cup blackberries
  • 1 tbsp honey
  • 2 tbsp fresh parsley, chopped (for garnish)

Directions

Step 1

Trim any excess fat from the pork tenderloin and slice it into 1-inch thick medallions.

Step 2

Sprinkle the pork medallions with salt and black pepper on both sides. Lightly dredge each piece in flour, shaking off the excess.

Heat a large skillet over medium-high heat. Add the olive oil and butter, swirling to combine.

Once the butter is melted and foaming, add the pork medallions in a single layer. Sear for 2-3 minutes per side, or until golden brown. Work in batches if necessary to avoid overcrowding the pan. Set the pork aside on a plate.
