Ingredients

  • 1 cup Oat bran
  • 0.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 1 cup Mashed ripe banana
  • 1 unit Large egg
  • 0.5 cup Milk
  • 0.25 cup Honey
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 10-cup muffin tin or line it with paper liners.

Step 2

In a large mixing bowl, combine oat bran, all-purpose flour, baking powder, ground cinnamon, and salt. Stir to blend evenly.

Step 3

In a separate bowl, mash the ripe bananas until smooth. Add the egg, milk, honey, vegetable oil, and vanilla extract. Whisk the wet ingredients together until fully combined.

Step 4

Pour the wet ingredients into the bowl of dry ingredients. Gently stir until just combined. Be careful not to overmix; it’s okay if the batter is slightly lumpy.

Step 5

Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full.

Step 6

Bake in the preheated oven for 15-18 minutes or until a toothpick inserted into the center of a muffin comes out clean.

Step 7

Remove the muffins from the oven and let them cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 8

Serve warm or at room temperature. Store leftovers in an airtight container for up to 3 days, or freeze for longer storage.
