Ingredients

  • 500 g Chicken breast
  • 2 tbsp Soy sauce
  • 1 cup Peanut butter (creamy or crunchy)
  • 1 cup Coconut milk
  • 2 tbsp Lime juice
  • 2 pcs Garlic clove
  • 1 tbsp Brown sugar
  • 1 tsp Ground ginger
  • 0.5 tsp Chili flakes (optional)
  • 2 tbsp Vegetable oil
  • 2 tbsp Fresh cilantro (for garnish)

Directions

Step 1

Cut the chicken breasts into bite-sized pieces and place them in a bowl.

Step 2

Add 1 tablespoon of soy sauce to the chicken and mix well. Set aside to marinate for 10 minutes while you prepare the sauce.

Step 3

In a saucepan, combine the peanut butter, coconut milk, lime juice, minced garlic, brown sugar, ground ginger, remaining 1 tablespoon of soy sauce, and chili flakes (if using).

Step 4

Stir the sauce mixture over medium heat until smooth and slightly thickened, about 5-7 minutes. Remove from heat and set aside.
