  • 1 large russet potato, peeled and diced
  • 2 stalks celery stalks, sliced
  • 2 tablespoons tomato paste
  • 4 cups chicken or vegetable broth
  • 1 14.5-ounce can diced tomatoes (with juice)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the ground turkey to the pot and cook, breaking it up with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Remove the turkey from the pot and set it aside.

Step 3

In the same pot, add the diced onion and cook for 3-4 minutes, until softened.

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.
