Ingredients

  • 250 grams spaghetti
  • 4 tablespoons olive oil
  • 4 units garlic cloves
  • 0.5 teaspoons red pepper flakes
  • 50 grams parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper, ground
  • 120 milliliters pasta water

Directions

Step 1

Bring a large pot of water to a boil. Add 1 teaspoon of salt and cook the spaghetti according to the package instructions until al dente. Reserve 120 milliliters (1/2 cup) of pasta water before draining, then set the pasta aside.

Step 2

While the pasta is cooking, peel and thinly slice the garlic cloves.

Step 3

In a large skillet, heat 4 tablespoons of olive oil over medium heat. Add the sliced garlic and sauté for 1–2 minutes, stirring constantly, until golden and fragrant. Be careful not to burn the garlic.

Step 4

Add 0.5 teaspoons of red pepper flakes to the skillet and stir for 30 seconds to release their flavor.

Step 5

Reduce the heat to low and add the drained pasta to the skillet. Toss to coat the pasta in the garlic and oil mixture.

Gradually pour in the reserved pasta water, about 2 tablespoons at a time, tossing the pasta after each addition to create a light sauce.

Add the grated parmesan cheese and continue to toss the pasta until the cheese melts and combines with the sauce.

Season with 0.5 teaspoons of black pepper, adjusting to taste. Add additional salt if needed.
