  • 2 pieces Garlic cloves, minced
  • 200 grams Mushrooms (e.g., cremini, button, or shiitake), sliced
  • 200 milliliters Heavy cream
  • 50 grams Grated Parmesan cheese
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper, freshly ground
  • 2 tablespoons Fresh parsley, chopped
  • 120 milliliters Pasta cooking water (reserved)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Reserve 120 milliliters (½ cup) of the pasta cooking water before draining the pasta.

Step 2

While the pasta is cooking, heat the olive oil and butter in a large skillet over medium heat.

Step 3

Add the minced garlic and sauté for 1 minute until fragrant, being careful not to let it burn.

Step 4

Add the sliced mushrooms to the skillet and cook for 5–7 minutes, stirring occasionally, until they are golden brown and have released their liquid.

Step 5

Lower the heat to medium-low and add the heavy cream to the skillet. Stir to combine and let it simmer for 2–3 minutes.

Stir in the grated Parmesan cheese, salt, and black pepper. If the sauce looks too thick, add the reserved pasta water a little at a time until the desired consistency is reached.

Add the cooked pasta to the skillet and toss to coat it evenly in the mushroom cream sauce.
