Ingredients

  • 6 sheets Phyllo dough sheets
  • 200 grams Feta cheese, crumbled
  • 100 grams Ricotta cheese
  • 2 tablespoons Fresh parsley, finely chopped
  • 1 tablespoon Fresh dill, finely chopped
  • 1 large Egg
  • 3 tablespoons Olive oil
  • 2 tablespoons Butter, melted
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Sesame seeds (optional)

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.

Step 2

In a large mixing bowl, combine crumbled feta cheese, ricotta cheese, parsley, dill, and the egg. Mix well to form a smooth and creamy filling. Season with salt and black pepper.

Step 3

Place one phyllo dough sheet on a clean surface. Lightly brush it with olive oil and then layer a second sheet on top, brushing it with olive oil as well. Repeat until all 6 sheets are layered.

Step 4

Using a sharp knife, cut the stacked phyllo sheets into 12 equal rectangles.

Step 5

Spoon about a tablespoon of the cheese mixture onto the edge of each rectangle. Roll the phyllo over the filling, tucking in the sides as you go to form a neat roll.

Step 6

Place each roll seam-side down on the prepared baking tray. Brush the tops with melted butter and sprinkle with sesame seeds if desired.

Step 7

Bake in the preheated oven for 18–20 minutes, or until golden brown and crisp.

Step 8

Allow the Kalitsounia rolls to cool slightly before serving. Enjoy warm or at room temperature!
