Ingredients

  • 12 ounces kielbasa sausage
  • 1 medium yellow onion
  • 2 medium carrots
  • 2 celery stalks
  • 3 garlic cloves
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 6 cups chicken broth
  • 2 15-oz cans canned Great Northern beans
  • 1 bay leaf
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Slice the kielbasa sausage into thin rounds and add it to the pot. Cook for 4-5 minutes, stirring occasionally, until browned. Remove the sausage with a slotted spoon and set aside.
