Ingredients

  • 4 medium Russet potatoes
  • 1 medium Yellow onion
  • 3 tablespoons Olive oil
  • 1 tablespoon Butter
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Wash and peel the potatoes, then dice them into 1/2-inch cubes for even cooking.

Step 2

Peel and finely slice the yellow onion into thin strips.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the cubed potatoes and spread them into an even layer in the pan. Cook for 8-10 minutes, stirring occasionally, until the potatoes are golden brown on the outside and softened in the center.

Step 4

Add the remaining 1 tablespoon of olive oil and 1 tablespoon of butter to the skillet. Stir in the sliced onion and cook for 5-7 minutes, stirring often, until the onion becomes soft and caramelized.

Step 5

Season the potato and onion mixture with garlic powder, paprika, salt, and black pepper. Stir well to evenly coat the potatoes and onions with the spices.

Step 6

Continue cooking for an additional 2-3 minutes, stirring occasionally, until the flavors are well combined.

Step 7

Remove the skillet from heat and garnish with freshly chopped parsley, if desired.

Step 8

Serve the fried breakfast potatoes warm as a side dish or pair them with eggs and toast for a complete breakfast.
