Ingredients

  • 12 oz Pasta (penne, rigatoni, or shells)
  • 6 slices Bacon
  • 1 cup Frozen peas
  • 2 tbsp Butter
  • 3 cloves Garlic (minced)
  • 1.5 cups Heavy cream
  • 0.5 cup Grated Parmesan cheese
  • 0.5 cup Shredded mozzarella cheese
  • 0.25 cup Crumbled Gorgonzola cheese
  • 0.5 cup Shredded Fontina cheese
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh parsley (chopped)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta. Set aside.

Step 2

While the pasta cooks, heat a large skillet over medium heat. Add the bacon slices and cook until crispy, about 6-8 minutes. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain. Once cooled, chop the bacon into small pieces.

Step 3

In the same skillet, remove excess bacon grease, leaving about 1 tablespoon. Add the butter and minced garlic to the skillet. Sauté for 1-2 minutes until fragrant.

Stir in the heavy cream and bring it to a gentle simmer. Gradually whisk in the Parmesan, mozzarella, Gorgonzola, and Fontina cheeses until fully melted and smooth.
