Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 celery stalks, diced
  • 1 medium carrot, peeled and diced
  • 2 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 4 cups fish stock or seafood broth
  • 2 medium potatoes, peeled and diced
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 1 pound skinless white fish fillets (e.g., cod or haddock), cut into chunks
  • 1 cup heavy cream
  • 2 tablespoons chopped fresh parsley
  • 0 crusty bread, for serving (optional)

Directions

Step 1

Heat the butter and olive oil in a large pot over medium heat.

Step 2

Add the chopped onion, celery, and carrot to the pot. Sauté for 5-6 minutes or until softened.

Step 3

Stir in the minced garlic and cook for an additional minute until fragrant.

Step 4

Sprinkle the flour over the vegetables and stir constantly for 1-2 minutes to create a roux.

Step 5

Gradually pour in the fish stock while stirring to prevent lumps from forming. Bring the mixture to a simmer.

Step 6

Add the diced potatoes, bay leaf, salt, and ground black pepper. Cover and simmer for 10-12 minutes or until the potatoes are tender.

Step 7

Gently stir in the fish chunks and cook for 5-7 minutes or until the fish is opaque and flakes easily.

Step 8

Reduce the heat to low and stir in the heavy cream. Let it warm through for a minute, but do not let it boil.

Step 9

Remove the bay leaf and adjust seasoning if necessary.

Step 10

Ladle the chowder into bowls, garnish with fresh parsley, and serve with crusty bread, if desired.
