Ingredients

  • 4 cups fresh blackberries
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter
  • 0.75 cup milk
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon ground cinnamon
  • 1 teaspoon lemon juice

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash the blackberries and gently pat them dry. In a medium bowl, toss them with half a cup of granulated sugar and the lemon juice. Set aside to let the berries macerate for about 10 minutes.

Step 3

While the berries rest, place the butter into a 9x9-inch baking dish (or a similar-sized dish) and put the dish in the preheating oven until the butter is completely melted. Remove carefully from the oven and set aside.

Step 4

In a medium mixing bowl, whisk together the all-purpose flour, baking powder, salt, and the remaining half cup of sugar. Gradually add the milk and vanilla extract, stirring until the batter is smooth.

Step 5

Pour the batter evenly over the melted butter in the baking dish. DO NOT STIR; the batter should float on top of the butter.

Step 6

Spoon the sugared blackberries evenly over the batter. Again, do not mix; the batter will rise up around the berries as it bakes.

Step 7

Dust the top lightly with ground cinnamon for added warmth and flavor, if desired.

Step 8

Bake in the preheated oven for 35-40 minutes, or until the top is golden and a toothpick inserted into the cobbler comes out clean (aside from any blackberry juices).

Step 9

Allow the cobbler to cool slightly (about 10 minutes) before serving warm.

Step 10

Enjoy on its own or with a scoop of vanilla ice cream for the perfect Southern-style dessert!
