Ingredients

  • 2 pieces Eggs
  • 1 spray Non-stick cooking spray
  • 0.5 cup Bell pepper (any color), diced
  • 1 handful Spinach leaves
  • 2 tablespoons Low-fat shredded cheddar cheese
  • 1 piece Whole wheat tortilla
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 teaspoon Hot sauce (optional)

Directions

Step 1

In a small bowl, crack the eggs and whisk them with a fork until well-blended. Add a pinch of salt and pepper to taste.

Heat a non-stick skillet over medium heat and lightly coat it with non-stick cooking spray.
