  • 1 tablespoon butter
  • 0.5 cup onion, diced
  • 0.5 cup bell pepper, diced
  • 1 cup spinach leaves, chopped
  • 0.5 cup shredded cheese (cheddar, mozzarella, or your choice)

Directions

Step 1

Preheat your oven to 375°F (190°C).

In a medium mixing bowl, whisk together the eggs, milk, salt, and black pepper until fully combined. Set aside.

Heat a large, ovenproof non-stick or cast-iron skillet over medium heat. Add the olive oil and butter, allowing the butter to melt.
