Ingredients

  • 1 cup Brown lentils
  • 1 can Coconut milk
  • 2 cups Vegetable broth
  • 1 medium Onion, finely chopped
  • 3 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 1 tablespoon Olive oil
  • 2 teaspoons Curry powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Spinach, fresh
  • 1 tablespoon Lime juice, fresh
  • 2 tablespoons Cilantro, chopped (optional)

Directions

Step 1

Rinse the brown lentils under cold water and set aside.

Step 2

In a large saucepan or pot, heat the olive oil over medium heat.

Step 3

Add the chopped onion and sauté for 3-4 minutes until translucent.

Stir in the minced garlic and ginger, and sauté for 1-2 minutes until fragrant.

Add the curry powder, ground cumin, and turmeric powder. Toast the spices for about 30 seconds to release their aroma.

Pour in the vegetable broth and coconut milk, and stir to combine.
