Ingredients

  • 12 ounces egg noodles
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 4 cups chicken broth
  • 0.5 cup heavy cream
  • 1 cup frozen peas and carrots
  • 0.25 cup parmesan cheese (optional)
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the egg noodles according to the package instructions until al dente. Drain and set aside.

While the noodles cook, heat the olive oil in a large skillet over medium-high heat.

Season the chicken breasts on both sides with salt, pepper, and garlic powder. Add them to the skillet and cook for 4-5 minutes per side, or until golden brown and fully cooked (internal temperature reaches 165°F). Remove the chicken from the skillet and let it rest on a cutting board for 5 minutes before slicing into thin strips.

Step 4

In the same skillet, add the chicken broth and bring it to a simmer. Stir in the heavy cream and frozen peas and carrots, cooking for 3-4 minutes until the vegetables are tender.

Step 5

Add the cooked noodles and sliced chicken back into the skillet, tossing everything together to coat in the creamy sauce. Taste and adjust seasoning if needed.
