Ingredients

  • 2 cups Leftover pork tenderloin
  • 1 medium Carrot
  • 1 medium Bell pepper
  • 2 cups Broccoli florets
  • 3 cloves Garlic
  • 1 inch Ginger
  • 3 tablespoons Soy sauce
  • 2 tablespoons Oyster sauce
  • 1 teaspoon Sesame oil
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Cornstarch
  • 3 tablespoons Water
  • 4 cups Cooked rice or noodles
  • 2 stalks Green onions (optional)
  • 1 tablespoon Sesame seeds (optional)

Directions

Step 1

Thinly slice the leftover pork tenderloin into bite-sized strips and set aside.

Step 2

Peel the carrot and slice it into thin rounds. Slice the bell pepper into strips and chop the broccoli into small florets.

Step 3

Mince the garlic and grate the ginger.

Step 4

In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, cornstarch, and water to create the stir-fry sauce. Set it aside.

Step 5

Heat a large skillet or wok over medium-high heat and add the vegetable oil.

Step 6

Once the oil is hot, add the garlic and ginger. Stir-fry for 30 seconds until fragrant.

Step 7

Add the carrots, broccoli, and bell peppers to the skillet. Stir-fry for 3-4 minutes, or until the vegetables are just tender but still crisp.

Step 8

Push the vegetables to one side of the skillet and add the sliced pork to the empty side. Heat the pork for 1-2 minutes, stirring occasionally, until warmed through.

Step 9

Pour the stir-fry sauce over the vegetables and pork. Toss everything together to coat evenly in the sauce. Cook for another 1-2 minutes, or until the sauce thickens slightly.

Step 10

Remove the skillet from the heat. Serve the stir-fry over cooked rice or noodles.

Step 11

Garnish with sliced green onions and sesame seeds, if desired.
