  • 2 tablespoons Tomato paste
  • 400 milliliters Coconut milk
  • 250 milliliters Chicken broth
  • 200 grams Couscous
  • 2 tablespoons Fresh cilantro (chopped, optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Heat the olive oil in a large skillet or sauté pan over medium heat.

Step 2

Add the chopped onion and minced garlic to the pan. Cook for 3-4 minutes, stirring occasionally, until softened and fragrant.

Sprinkle the curry powder, ground cumin, and turmeric over the onions and garlic. Stir well to coat the ingredients with the spices, cooking for 1 minute to release their aromas.
