Ingredients

  • 1 pound Boneless, skinless chicken breast

  • 0.5 teaspoon Black pepper
  • 1 Yellow onion, diced
  • 2 Garlic cloves, minced
  • 2 Carrots, peeled and diced
  • 2 Celery stalks, diced
  • 6 cups Low-sodium chicken broth
  • 0.5 teaspoon Dried thyme
  • 0.5 teaspoon Dried parsley
  • 2 cups Egg noodles (whole grain, if possible)
  • 1 cup Frozen peas
  • 2 cups Fresh spinach leaves
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Season the chicken breast with salt and black pepper, then add it to the pot. Cook for 3-4 minutes on each side, until lightly browned. Remove chicken from the pot and set aside.

In the same pot, add the diced onion, minced garlic, diced carrots, and diced celery. Sauté for about 5 minutes, until the vegetables begin to soften.
