Ingredients

  • 300 grams Self-raising flour
  • 50 grams Butter
  • 150 milliliters Milk
  • 50 grams Soft brown sugar
  • 1 teaspoon Ground cinnamon
  • 100 grams Mixed dried fruit (raisins, sultanas, currants)
  • 2 tablespoons Golden syrup
  • 2 tablespoons Milk (for brushing)

Directions

Step 1

Preheat your oven to 200°C (400°F) or 180°C (Fan). Line a baking tray with parchment paper.

Step 2

In a large mixing bowl, combine the self-raising flour and a pinch of salt. Rub in the butter using your fingertips until the mixture resembles fine breadcrumbs.

Step 3

Gradually add the milk to the flour mixture, stirring with a wooden spoon until a soft dough forms.

Step 4

Lightly flour your work surface and roll out the dough into a rectangle approximately 25 cm by 30 cm.

In a small bowl, mix the brown sugar and cinnamon together. Sprinkle this mixture evenly over the rolled-out dough.

Spread the mixed dried fruit evenly over the sugar and cinnamon layer.

Starting from one of the longer edges, tightly roll the dough into a log shape, ensuring the filling stays evenly distributed.

Brush the tops of the buns with milk, then bake in the preheated oven for 18–20 minutes, or until golden and cooked through.

While the buns are still warm, brush the tops with golden syrup to create a shiny glaze.
