Ingredients

  • 250 grams chicken livers
  • 100 grams butter
  • 1 medium onion
  • 2 units garlic cloves
  • 60 milliliters cheap cooking wine (red or white)
  • 1 teaspoon fresh thyme (optional)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons cream or milk
  • 0 toast or crackers (for serving)

Directions

Step 1

Rinse the chicken livers under cold water, carefully trim off any connective tissue or fat, and pat them dry with paper towels.

Step 2

Peel and finely chop the onion and garlic cloves.

Step 3

Melt half the butter (50 grams) in a large skillet over medium heat.

Step 4

Add the onions and garlic to the skillet and sauté until softened and fragrant, about 3-4 minutes.

Step 5

Increase the heat to medium-high and add the chicken livers to the skillet. Cook for 3-4 minutes per side, or until browned on the outside but still slightly pink in the center.

Step 6

Deglaze the skillet by pouring in the cooking wine and stirring. Let it simmer for about 2-3 minutes, or until most of the liquid has evaporated.

Step 7

Season the mixture with thyme (if using), salt, and black pepper. Stir to combine.

Step 8

Transfer the contents of the skillet to a food processor or blender. Add the remaining butter and cream (or milk) to the mixture.

Step 9

Blend until smooth and creamy, scraping down the sides as needed. Taste and adjust the seasoning if necessary.

Step 10

Transfer the pâté to a serving dish or small ramekins. Cover and refrigerate for at least 1 hour to allow the flavors to meld and firm up.

Step 11

Serve chilled or at room temperature with toast or crackers of your choice. Enjoy!
