  • 3 cloves garlic cloves, minced
  • 15 ounces canned kidney beans, drained and rinsed
  • 14.5 ounces canned diced tomatoes
  • 1 cup chicken or vegetable broth
  • 1 cup long-grain white rice
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon hot sauce (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Heat the olive oil in a large skillet or Dutch oven over medium heat.

Add the sliced andouille sausage and cook for 4-5 minutes, stirring occasionally, until browned. Remove and set aside.

In the same skillet, add the diced onion, green bell pepper, and celery. Cook for 5 minutes or until softened.
