Ingredients

  • 500 grams Boneless chicken thighs
  • 2 teaspoons Cumin seeds (jeera)
  • 3 tablespoons Yogurt
  • 1.5 tablespoons Ginger-garlic paste
  • 0.5 teaspoons Turmeric powder
  • 1 teaspoons Red chili powder
  • 1 teaspoons Ground coriander
  • 1 teaspoons Salt
  • 3 tablespoons Vegetable oil
  • 2 tablespoons Fresh cilantro (optional, for garnish)
  • 2 pieces Green chilies (optional)

Directions

Step 1

Cut the boneless chicken thighs into bite-sized pieces and set aside.

Step 2

In a small bowl, whisk together yogurt, ginger-garlic paste, turmeric powder, red chili powder, ground coriander, and salt to create a marinade.

Step 3

Add the chicken pieces to the marinade and mix thoroughly to ensure all pieces are coated. Let it marinate for at least 10 minutes (can also be marinated longer for deeper flavors).

Step 4

Heat vegetable oil in a large skillet or wok over medium heat.

Step 5

Once the oil is hot, add cumin seeds and let them splutter for 30 seconds to release their aroma.

Step 6

Optional: Add the green chilies (slit lengthwise) to the oil for extra heat.

Step 7

Add the marinated chicken pieces to the skillet and stir well to coat them in the oil and cumin seeds.

Step 8

Cook the chicken on medium heat for 10–12 minutes, stirring occasionally. Ensure the chicken is cooked through but still juicy.

Step 9

Once the chicken is tender and the spices have fully coated it, turn off the heat.

Step 10

Garnish the dish with freshly chopped cilantro if desired, and serve hot with rice, naan, or roti.
