Ingredients

  • 1 pound Fresh strawberries
  • 3 tablespoons Granulated sugar
  • 2 cups All-purpose flour
  • 2.5 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 3 tablespoons Granulated sugar (for shortcake)
  • 0.5 cups Unsalted butter
  • 0.75 cups Whole milk
  • 1 cup Whipped cream

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

Hull the strawberries and slice them into thin pieces. Place them in a mixing bowl.

Step 3

Add 3 tablespoons of granulated sugar to the strawberries, stir to combine, and let them sit to macerate while preparing the shortcakes.

Step 4

In a large bowl, whisk together the all-purpose flour, baking powder, salt, and 3 tablespoons of sugar.

Step 5

Cut the cold unsalted butter into small cubes and add it to the flour mixture. Use a pastry cutter or your fingers to mix until the texture resembles coarse crumbs.

Step 6

Gradually pour in the milk while stirring, just until the dough comes together. Do not overmix.

Step 7

Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch-thick rectangle. Use a biscuit cutter or a glass to cut out 6 rounds.

Step 8

Place the shortcake rounds on the prepared baking sheet and bake for 12-15 minutes, or until golden brown. Remove from the oven and let them cool slightly.

Step 9

To assemble, slice each shortcake in half horizontally. Layer the bottom half with macerated strawberries and a dollop of whipped cream, then place the top half on and add more strawberries and whipped cream, if desired.

Step 10

Serve immediately and enjoy your quick and easy strawberry shortcake!
