Ingredients

  • 2 tablespoons olive oil
  • 1 pound ground beef or lamb
  • 1 medium yellow onion, diced
  • 2 cloves garlic cloves, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups instant mashed potatoes
  • 1 cup milk
  • 2 tablespoons butter
  • 0.5 cup shredded cheddar cheese (optional)

Directions

Step 1

Preheat your oven to 400°F (205°C).

Step 2

Heat the olive oil in a large skillet over medium heat. Add the ground beef or lamb and cook until browned, breaking it apart with a spoon, about 5-7 minutes.

Step 3

Add the diced onion and minced garlic to the skillet. Cook for an additional 3-4 minutes, until the onion is softened.

Step 4

Stir in the frozen mixed vegetables, tomato paste, beef broth, Worcestershire sauce, salt, and black pepper. Simmer for 5-7 minutes, allowing the flavors to meld together and the mixture to slightly thicken.

Step 5

While the meat filling simmers, prepare the instant mashed potatoes according to the package instructions, substituting milk and butter for extra creaminess. Set aside.

Step 6

Transfer the meat mixture to a greased 8x8-inch baking dish, spreading it out evenly.

Step 7

Spread the prepared mashed potatoes over the top of the meat mixture, smoothing it out with a spatula. If desired, sprinkle shredded cheddar cheese over the top.

Step 8

Bake the Shepherd's Pie in the preheated oven for 15 minutes, or until the top is lightly golden and the filling is bubbly.

Step 9

Remove from the oven and let cool for 5 minutes before serving. Enjoy your Quick and Easy Shepherd's Pie!
