  • 4 cups Water
  • 1 teaspoons Mustard seeds
  • 10 leaves Curry leaves
  • 2 whole Dried red chilies
  • 0.25 teaspoons Fenugreek seeds
  • 0.25 teaspoons Asafoetida
  • 2 tablespoons Cooking oil (such as vegetable oil)
  • 2 tablespoons Fresh cilantro, chopped (optional, for garnish)

Directions

Step 1

Rinse the toor dal thoroughly under cold water and soak for 10 minutes.

Step 2

Add the soaked toor dal, 2 cups of water, and turmeric powder to a pressure cooker. Cook for 3-4 whistles or until the dal is soft and mushy. Set aside.

While the dal is cooking, prepare the vegetables by washing and chopping them into bite-sized pieces.

In a large pot, add the chopped vegetables, 2 cups of water, tamarind paste, and salt. Bring to a boil, then simmer until the vegetables are tender (about 8-10 minutes).
