Ingredients

  • 3 cups Crunchy cornflakes
  • 1 cup Creamy peanut butter
  • 0.5 cup Honey
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chocolate chips (optional)

Directions

Step 1

In a medium saucepan, combine the creamy peanut butter and honey. Heat over low-medium heat, stirring constantly until the mixture is smooth and well combined. Do not let it boil.

Step 2

Remove the saucepan from heat and stir in the vanilla extract.

Step 3

In a large mixing bowl, add the cornflakes. Pour the warm peanut butter mixture over the cornflakes and gently fold until the cereal is evenly coated.

Step 4

If using chocolate chips, allow the mixture to cool slightly to avoid melting the chips completely, then fold them in.

Step 5

Using a tablespoon or your hands, scoop small portions of the mixture and form them into snack-sized balls. Press firmly to ensure they hold their shape.

Step 6

Place the formed balls on a baking sheet lined with parchment paper.

Step 7

Refrigerate for 30 minutes or until the snack balls are firm.

Step 8

Store in an airtight container in the refrigerator for up to 1 week. Serve and enjoy!
