Ingredients

  • 3 tablespoons Butter
  • 1 medium Onion, finely chopped
  • 2 Celery stalks, diced
  • 2 cloves Garlic, minced
  • 3 tablespoons All-purpose flour
  • 2 cups Clam juice
  • 1 cup Chicken broth
  • 2 large Russet potatoes, peeled and diced
  • 2 cans (6.5 oz each) Canned clams, drained and liquid reserved
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Dried thyme
  • 2 tablespoons Chopped fresh parsley, for garnish
  • 1 optional Oyster crackers or crusty bread, for serving

Directions

Step 1

In a large pot over medium heat, melt the butter.

Step 2

Add the chopped onion and diced celery, and sauté for 4-5 minutes until they are softened.

Step 3

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 4

Sprinkle the all-purpose flour over the vegetables and stir well to coat. Cook for 1-2 minutes, stirring constantly, to remove the raw flour taste.

Step 5

Gradually whisk in the clam juice and chicken broth until smooth. Bring the mixture to a simmer.

Step 6

Add the diced potatoes and the reserved clam liquid. Cover and let simmer for 10-12 minutes, or until the potatoes are tender.

Step 7

Lower the heat to medium-low. Stir in the canned clams, heavy cream, salt, black pepper, and dried thyme. Cook for 2-3 minutes or until the chowder is heated through. Do not boil once the cream is added.

Step 8

Taste and adjust seasoning if needed.

Step 9

Ladle the clam chowder into bowls, garnish with fresh parsley, and serve with oyster crackers or crusty bread, if desired.
